Lots of people tend to not know what to do with Kale. However, it is one of my personal FAVORITE leafy greens. Kale Chips, adding Fiber to Smoothies, and mixing it with eggs, but have you ever thought about soup? It’s perfect! Adds a great flavor, and nutritional boost to any hearty soup. This week’s recipe comes from, Living Hope Farm, a Pennsylvania based non-profit Faith community. Reteaching the masses not only that raising agriculture is a gift and the way to really grow community, but as well a way to care for our God-given earth!

Kale Potato Soup

1 large bunch kale (chopped)
1 tablespoon butter
1 large onion (chopped)
1 clove garlic (minced)
2 large potatoes (diced)
2 cups hot water or broth
3 cups of water or broth
½ teaspoon salt
Dash of pepper

Steam Kale and set aside. (Don’t try to cook it with the potatoes; the flavor will be too strong). Melt butter in a soup pot. Add onion and sauté until golden. Add garlic and sauté another minute. Add 2 cups hot water or broth and potatoes, then bring to boil, reduce heat and simmer until potatoes are soft. Remove half of the cooked potatoes; puree the rest with the cooking liquid and return to the soup pot. Return reserved potatoes and steamed kale to soup pot. (Puree everything if a smooth texture is desired). Add salt, pepper and 3 cups of water or broth or milk to preferred consistency. Heat gently until hot and serve.
